We’re going back to French cookery for this week’s Love Box. This time, we’re putting a very subtle twist on the classic chicken cordon bleu. Traditionally, chicken cordon bleu is a chicken schnitzel stuffed with ham and cheese. But we’ve tweaked a few things to make it more outstanding.
Most notably, we cured a farm-raised ham with dark molasses, maple syrup, and a blend of herbs and spices. We then smoked it on a blend of hickory, apple, and oak wood. It provides some truly outstanding flavour to this dish, a subtle undercurrent of smoke to blend the flavours together.
This week's box includes:
Chicken Cordon Bleu Apple sage brined chicken breast, stuffed with a white wine Swiss cheese fondue, green onions, and house smoked apple and hickory ham. Oven baked with a panko breading.
Mashed Potatoes A good mashed potato makes all the difference. Light and airy, with just a hint of garlic and minced parsley.
Green Beans in a lemon beurre blanc Al dente green beans tossed in a bright lemon butter sauce.
Tarte au Sucre Another French classic, and one of our personal favourites.
Our vegetarian alternative this week is a broccoli-and-Swiss stuffed puff pastry. As usual, we can do a half-vegetarian, half-meat box so everyone gets fed. Just include a note with your preference at checkout.
