Originally we had something different planned for this week, until we had a conversation that totally rewrote our schedule. Long hours in the kitchen often leave one person posing a question like, “Would you rather give up coffee, or alcohol,” or, in this particular case, “What’s your favourite comfort food?”
We got into a long discussion about meals that make us smile, memories of childhood, and the foods that brought us together. Even just talking about them left us with a lingering bouffage (definition: the feeling of satisfaction following a good meal with good company). It’s no secret that this whole lockdown thing seems to be dragging on forever, and we could all use a little comfort. So in light of that, we scrapped our plans, and put together a Love Box with some of our favourite comfort foods.
Mac & Cheese I hope that everyone out there has a memory of eating macaroni and cheese as a kid. I can picture the round ceramic baking dish that my mom uses for hers sitting on the stove. It’s got a spoon sticking out of it and there’s a wall of macaroni noodles that we’ve all carved our portions out of. I can smell it too.
We opted for a cheesy, gooey, warm you to your soul mac & cheese. We use a blend of 5 different cheeses to get the flavour right where it needs to be, and then we studded it with cheese curds for extra decadence. We’ve aso switched out the classic elbow macaroni in favour of cavatappi for better sauce retention. In a word, it’s exquisite.
BBQ Chicken Summer evenings and cottage getaways were the inspiration for our protein this week. There’s nothing better than barbecued chicken. We brine our chicken supremes with aromatic spices and a touch of maple to ensure that each bite is juicer than the last. Basted with an in-house made BBQ sauce and char grilled, you’ll wish you’d ordered a second box.
Kale Caesar Salad I don’t shy away from taking a back seat when I know someone has me beat, and this salad is definitely one of the reasons we became friends, so I’ll say it again: Anna makes the best kale Caesar I have ever eaten in my entire life.
Bite-sized pieces of kale dressed with Anna’s famous Caesar dressing topped with small diced sun dried tomatoes and crispy onions. The dressing clings to all the little folds of kale, and every bite screams perfection.
Nanaimo Bars I don’t even know if I need a descriptor here, because nanaimo bars are that good, especially if they’re homemade. The thin layer of chocolate, the buttery icing, and the chewy base make this dessert such a great comfort food. I think it’s because we always used to get them on road trips or as dessert at big family dinners, but they just seemed like the right fit to close out this comforting meal.
Toasted Cumin Cauliflower Steak with a Tahini Drizzle (Vegetarian Alternate) We ended off our conversation in the kitchen talking about our favourite vegetarian dishes. The one we one hundred percent agreed on was this particular cauliflower steak. Pan seared with toasted cumin seeds and a hint of garlic, then drizzled with a light tahini sauce, this cauliflower steak rivals anything meat-based. It’s so good.
