I remember when my old boss Bob got back from his trip to Portugal. He kept going on and on about piri piri chicken, and how he couldn’t find a piri piri sauce that was authentic enough for him—so he got to work. The next day, he comes into the kitchen with a bag of peppers and onions that he’d char grilled himself at home. Two hours later, it looked like a bomb had gone off in the prep kitchen, but he came up with the perfect piri piri sauce.
We tweaked it to make it replicable for the restaurant, and by the end of that process we had something that was so good we started looking into retailing it. We visited various preserve makers, as well as buying every piri piri sauce on the market to do taste tests. Ours came out on top every time. Although we never got around to retailing it, it ended up replacing the hot sauce on every single brunch table.
Anna and I have been thinking a lot lately about our beginning at Stoneface Dolly’s. And it’s with that in mind we bring you the Love Box: Portugal.
Piri Piri chicken The iconic Portuguese chicken dish. Chicken supreme marinated in our traditional piri piri sauce, char grilled and slow roasted to perfection. Bursting with vibrant flavour, a hint of smoke, and as tender as tender can be.
Portuguese Potatoes Halved mini potatoes tossed in fresh garlic, smoked paprika, olive oil, and salt slowly crisped to perfection. These potatoes are our favourite potatoes. I mean, every potato is our favourite potato, ut these ones especially.
Goat Cheese, Green Bean, and Tomato Salad Charred green beans, blistered cherry tomatoes, and roasted red pepper in a light lemon herb dressing topped with chunks of creamy goat cheese.
Piri Piri Sauce .A small side of the delicious piri piri we’ve worked so hard on. You have to try it to believe it.
Portuguese Egg Tarts These egg tarts are unreal. If you haven’t heard the hype about Portuguese egg tarts then you have to try them to see what everyone is talking about. A subtly sweet egg custard in a flakey yet chewy crust, they are to die for. Seriously.
Risotto Stuffed Pepper (vegetarian alternate) Red bell pepper lightly charred and stuffed with barley risotto, crispy shredded kale, and cannellini beans, with a hint of parmigiana Reggiano. The perfect alternative to piri piri chicken.
Order cut-off is Wednesday June 2nd at 3pm with delivery Thursday June 3rd between 11am and 5pm.
