With everything opening up this summer, it seems like there's so much to do and so little time. I'm not sure if anyone else is in the same boat, but I've been running around so much trying to fit an entire year into one summer that I've barely taken a second to breathe.
So that's what we've tried to do with this Love Box. Take a breath.
Stuffed Chicken Supreme A chicken supreme brined overnight with fresh herbs stuffed with mushroom duxelles (finely diced mushroom, onion, garlic, and herbs that are slow cooked) and brie cheese. Oven roasted to perfection and elegant in its simplicity.
Mushroom Galette (Vegetarian Alternate) Many people are familiar with sweet galettes as a pie-like dessert, but much like a traditional pie there’s a whole world of savoury options out there that are to die for. We’ve opted for a local spelt flour pie crust filled with a blend of mushrooms flambeed in brandy, tossed with caramelized onions and fennel, and slices of brie cheese.
Garden Bean Salad Almost all of my friends have fond memories of sneaking beans right out of the garden, and crunching them for a delicious snack. We wanted to do those memories justice and let the true flavours of the veggies really come through on this one. Lightly blanched local beans, oven roasted beets, and a touch of lemon, olive oil, salt, and pepper to make the perfect dressing. Especially when accented by the salty pop of feta cheese. It tastes like a garden in every bite.
Zucchini and Fennel Israeli Cous-cous There’s zucchini for days coming out of the ground right now. I was having dinner with a friend who has what I can only imagine to be the world's largest zucchini patch, and he made a fresh zucchini, patty pan, and burrata salad that really showcased the depth of flavour available in these summer squashes.
So thanks to his inspiration, we’ve created this delicious Israeli cous-cous filled with zucchini, fennel, a hint of lemon, and just a touch of kale. Again, it’s like an entire garden in one bite.
Raspberry Clafoutis We love this dessert so much. It’s absolutely perfect in just about every single way. If you’re not a dessert person it isn’t overly sweet, and it’s relatively light. So on a hot summer evening it’s just the perfect amount of sweetness, lemon, and raspberry. It’s another one of those ones where I just can’t stop eating it once I’ve started.
