When we put out the call for requests a while back, a lot of the answers we got were right in line with what we expected. But the one that caught us off guard was the sumac chicken. Now don’t get us wrong, we loved it, it just never occurred to us that it would be anyone's favourite. To be honest with you, it was pretty humbling as our inspiration for it came right off Anna's kitchen table: sumac roasted chicken is her kids' all-time favourite meal.
When we got talking about what our thoughts were for this week, the words that got kicked around most were, “Fresh, crunchy, refreshing, and fulfilling.” This had us talking in circles about all of our favourite seasonal delights, until Anna mentioned that we hadn’t revisited the sumac chicken. After that, it took about five minutes to connect the dots. What we’ve done is taken one of your favourites, and tweaked it to be super light, super fresh, and super delicious.

Sumac Roasted Chicken Supreme
Sumac is like a secret weapon in the kitchen. It has a bright citrus flavour that can impart a lot of amazing flavour to take a dish to the next level. It wasn’t until Anna introduced me to her sumac chicken that I really fell in love with it. It was a game changer.
Chicken supremes brined for twelve hours then tossed in a sumac, garlic, and citrus marinade and oven roasted to perfection.
Ptitim (Israeli cous-cous)
If you’re familiar with regular cous-cous, this large grained alternative might look a little different, but it also might have you never looking back. There’s a number of different ways to make ptitim, but we make ours using the risotto method, which gives you unmatched texture and creaminess.
This particular side dish is full of fresh herbs, fennel, tomato, green onions, and just a touch of citrus.
It can be eaten hot or cold, it’s an absolute must.
Chilled Asparagus Salad with Feta and a Lemon Beurre Blanc
I haven’t been able to stop thinking about asparagus since our friend (and devoted food enthusiast) Susan showed up at our house with a bag of some gorgeous local asparagus. The best part was that it also happened to be from the farm of another one of our regular customers! With asparagus and summer eating on my mind, I crafted up this fresh side dish to perfectly accent the sumac chicken.
Caramelized Onion, Roasted Sweet Potato, and Brie Quiche
We decided to mix up this week’s vegetarian option and put together a mouth watering quiche. The perfect balance of onions caramelized with a touch of chardonnay, oven roasted sweet potato, and creamy brie cheese make for a vegetarian option that will tempt even the most devout carnivore.
Fresh Berry and White Chocolate Tart
Blueberries, raspberries, and a touch of orange zest provide the perfect accent to the creamy white chocolate in this delicious tart.
